Plum Glazed Chicken
Ingredients:
- 4 chicken breasts
- 4 plums, pitted and diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves of garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper, to taste
- 2 tablespoons olive oil
To make this delicious Plum Glazed Chicken, follow these simple instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the soy sauce, honey, minced garlic, grated ginger, and a pinch of salt and pepper. This will be the marinade for the chicken.
3. Place the chicken breasts in a large ziplock bag and pour the marinade over them. Make sure each chicken breast is evenly coated. Let the chicken marinate in the fridge for at least 30 minutes, or up to 2 hours.
4. While the chicken is marinating, prepare the plum glaze. In a small saucepan, combine the diced plums and 1/4 cup of water. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes, until the plums are soft and the liquid has thickened. Using an immersion blender or regular blender, puree the plum mixture until smooth. Set aside.
5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Cook for about 5 minutes on each side, until the chicken is browned.
6. Pour the plum glaze over the chicken breasts, making sure they are evenly coated. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken is fully cooked and the glaze is sticky and caramelized.
7. Serve the Plum Glazed Chicken with your choice of sides, such as rice, roasted vegetables, or salad. Enjoy!
