Kale and Bean Rice Bowl
Ingredients:
- 1 cup white rice
- 1 can of black beans
- 1 bunch of kale
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions:
1. Cook the rice according to package instructions.
2. Drain and rinse the black beans. Set aside.
3. Remove the kale leaves from the stems and tear them into bite-size pieces.
4. In a large pan, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
5. Add the torn kale leaves to the pan and cook for 3-4 minutes until wilted.
6. Season the kale with cumin, salt, and black pepper. Stir to evenly distribute the seasoning.
7. Add the black beans to the pan and stir to combine with the kale.
8. Once the rice is cooked, add it to the pan and mix everything together.
9. Serve the rice and bean mixture in a bowl and top with sliced avocado, chopped cilantro, and a squeeze of lime juice.
