2. Using a sharp knife, carefully make a slit in each pork chop to create a pocket for the stuffing.

3. Season the pork chops with salt and pepper.

4. Stuff each pork chop with queso fresco, dividing it evenly among the chops.

5. Heat a skillet over medium-high heat with some olive oil.

6. Sear the pork chops on both sides until browned, about 3-4 minutes per side.

7. Transfer the pork chops to a baking dish and bake in the preheated oven for about 15-20 minutes, or until they reach an internal temperature of 145°F (63°C).

8. While the pork chops are baking, trim the woody ends off the asparagus and toss them in olive oil, salt, and pepper.

9. Roast the asparagus in the oven for about 10-12 minutes, or until tender but still crisp.
