Garlic Beef Sirloin with Creamy Mushroom Potatoes

1. Preheat the oven to 375°F (190°C).

2. In a large skillet, heat some oil over medium-high heat. Add minced garlic and sliced leeks, sauté until fragrant.

3. Season the beef sirloin with salt and pepper, then sear it in the skillet until browned on all sides.

4. In a baking dish, layer sliced potatoes and pour the cream of mushroom soup over the top.

5. Place the seared beef sirloin on top of the potatoes and cover the dish with foil.

6. Bake in the preheated oven for about 1 hour or until the beef is cooked through and the potatoes are tender.
