Lemon Chicken with Broccoli and Rice
Ingredients:
- 1 lb chicken breasts
- 1 cup rice
- 2 cups broccoli florets
- 2 lemons
- Salt and pepper to taste
- Olive oil
1. Preheat the oven to 375°F.
2. Season the chicken breasts with salt, pepper, and the juice of one lemon.
3. Heat some olive oil in a skillet over medium-high heat.
4. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
5. Remove the chicken from the skillet and set aside.
6. In the same skillet, add the broccoli florets and cook for 3-4 minutes until slightly tender.
7. Cook the rice according to package instructions.
8. Zest and juice the second lemon and add it to the skillet with the broccoli.
9. Place the chicken breasts on top of the broccoli in the skillet.
10. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through.
11. Serve the lemon chicken with broccoli over the cooked rice.
